Soft Pumpkin Drop Cookies

Makes 50 cookies


1 ½ cups flour
1 tsp pumpkin pie spice
2 tsp baking powder
½ tsp ground clove
¼ tsp baking soda
1 cup packed light brown sugar

½ cup unsalted butter (1 stick), softened
1 egg
¾ cup canned pumpkin
½ cup powdered sugar
2 Tbsp skim milk
Juice of ½ lemon


Preheat oven to 350ºF. Place the flour, pumpkin pie spice, baking powder, clove and baking soda in a large bowl. Whisk until well-combined.

In another large bowl, beat the brown sugar and butter with an electric mixer on high until fluffy. Add the egg and beat on low until just combined. Add half the canned pumpkin and beat on low speed, then repeat with remaining pumpkin.

Add all of the flour mixture and stir with a wooden spoon about 10 turns until the flour is incorporated into the wet mixture. Using a tablespoon, drop the dough onto the prepared cookie sheets. Bake 6 to 8 minutes until the cookies puff and are no longer wet in the center. Transfer to a wire rack to cool completely. To make the icing, place the powdered sugar, milk and lemon in a small bowl. Whisk until smooth. Drizzle the icing over the cookies and serve immediately.
